Slice the chicken breasts lengthwise into halves, and season with salt and pepper. In a large frying pan, add half (3 tablespoons) of the PRE-infused olive oil and brown on both sides over medium heat until golden. Remove to a plate. (At this point, the chicken will not be cooked all the way through.)
In the same pan, add the remaining oil and mushrooms to the drippings, along with chopped rosemary, salt, and pepper. Brown them over medium heat for 2-3 minutes, stirring – to keep them from sticking to the pan. Add the chopped shallots (or onions), minced garlic, and cook for an additional 1-2 minutes. Add a heaping tablespoon of flour and stir until well combined. Slowly add the grape or apple vinegar, scraping the bottom of the pan with a spatula to release the brown bits into the chicken stock and heavy cream. Then, add 1 tablespoon of mustard. Stir well to combine the sauce.
Then, add the chicken breasts, along with the juices they released, back into the pan. Bring the sauce to a boil, then lower the heat to low and let it simmer for 10 minutes.
Serve this fab chicken dinner and sauce over mashed potatoes. (You could use cannabutter in the mashed potatoes, or egg noodles tossed with cannabutter) and some cannabuttered green beans or salad. Mmm!
